Best Ever Freezer Waffles

Here it is, the recipe you have been waiting for.  O.K. maybe you haven’t but once you try these Waffles you will never ever buy another Eggo or other frozen waffle again.  This recipe is another lifesaver but instead of for dinner it is for my other favorite meal of the day, breakfast.  When I make these I freeze the leftovers and we enjoy them all week.  I can’t wait for you to try it.  

 

Best Ever Freezer Waffles

1 Cup Krusteaz Light and Fluffy Buttermilk Pancake Mix
1 Cup Unbleached All-Purpose Flour
2 tsp. Baking Powder
1/2 tsp. salt
2 Lg. Eggs
1/2 Cup Melted Unsalted Butter(Not margarine,use the real thing)
1 tsp. Vanilla
4 TBSP Sugar
2 Cups Milk(Whole is best)

Start by Measuring the pancake mix,flour,baking soda and salt into a bowl,
mix and set aside.
Melt the butter over low heat on the stove.
Separate the two eggs, the whites in one bowl and the yolks in another.
Beat the egg whites until they reach the soft peak stage(they don’t have to hold a peak, they are perfect when they look like the consistency of pudding).
In the bowl with the Egg Yolks add the Vanilla, sugar and milk, and mix well.
Add the wet ingredients(except butter and egg whites) to the dry ingredients
half at a time, mixing with a whisk. It may be a little runny and that’s O.K. it will thicken a bit as you add the butter and egg whites.
Next add the warm butter gradually as you stir with the whisk.
Gently fold in the egg whites until well incorporated,using your Whisk as to not over mix.

Use a 1/4 cup measuring cup or large spoon to ladle the batter into a pre-heated
waffle iron at the Medium setting.

When Waffles are done, remove and enjoy with your favorite toppings, mine is strawberry jam with whip cream.

To Freeze, lay the leftover waffles on a cookie sheet and place in the freezer to flash freeze for at least 30 minutes. Once frozen, place Waffles in a Gallon Ziplock bag and place in the freezer with the date written on them. They are good for a couple of months, but they never make it that long at my house.

When you are ready to enjoy, take out a few waffles and place them on a microwave safe plate and heat them in the microwave for 20-30 seconds. Then put them in the toaster on the light setting to crisp them up. They smell and taste like they just came out of the Waffle Iron. My kids love them for snacks by themselves(they are really that good) or with Nutella,honey or Jam on them anytime of day. The cost is about 2.00 for 20 small waffles or 10 cents a piece and there are no artificial ingredients like the store bought varieties.
